🍰 Chocolate Apple Risotto

Ingredients
- apple juice 450 ml
- butter 2 tbsp
- risotto rice 150 g
- brown sugar 30 g
- chocolate, dark 50 g
- apples, red 3 pcs
- whipping cream 100 ml
- vanilla sugar 1 tsp
- chocolate, white 20 g
Instructions
- 1. Pour apple juice and 350 milliliters of water into a pot.
- 2. Bring the liquid to a boil.
- 3. Melt the butter in a second pot over medium heat.
- 4. Add the rice to the butter.
- 5. Sauté the rice for about one minute until it looks translucent.
- 6. Sprinkle sugar over the rice.
- 7. Let the sugar caramelize for about one minute.
- 8. Deglaze the rice with a ladle of the warm apple juice.
- 9. Ensure the rice is lightly covered with liquid.
- 10. Continue cooking the risotto for about 25 minutes, stirring occasionally.
- 11. Add more liquid if it almost evaporates.
- 12. Finely chop the dark chocolate.
- 13. Peel the apples.
- 14. Halve the apples.
- 15. Remove the cores from the apple halves.
- 16. Cut the apples into wedges.
- 17. Stir the chopped dark chocolate into the finished risotto.
- 18. Stir the cream into the risotto.
- 19. Remove the pot from the heat.
- 20. Let the risotto rest covered for about five minutes.
- 21. Place the apple wedges in the remaining apple juice.
- 22. Add vanilla sugar.
- 23. Bring the mixture to a boil.
- 24. Cook the apples for about five minutes until they are soft.
- 25. Finely chop or grate the white chocolate.
- 26. Serve the risotto garnished with the white chocolate.
