🍽️ Schnitzelchen with Potato Salad and Broccoli

Ingredients
- potatoes, mostly waxy 1 kg
- cucumbers 1 pc.
- shallots 1 pc.
- salt pinch
- ham schnitzel from the top round of pork 600 g
- broccoli 1 pc.
- vegetable broth 300 ml
- mustard 1 tsp
- vinegar 3 tbsp
- oil 4 tbsp
- pepper, black ground pinch
- BBQ spice mix 0.5 tsp
Instructions
- 1. Place the potatoes in a pot and cover them with water.
- 2. Bring the water to a boil.
- 3. Reduce the heat to medium.
- 4. Cover the pot.
- 5. Cook the potatoes for about 25 minutes.
- 6. Wash the cucumber thoroughly under running water.
- 7. Cut the cucumber in half.
- 8. Slice the cucumber halves into thin rounds.
- 9. Halve the shallot.
- 10. Peel the shallot.
- 11. Dice the shallot finely.
- 12. Put the cucumber slices and shallot cubes into a bowl.
- 13. Sprinkle the vegetables with a little salt.
- 14. Mix everything well together.
- 15. Rinse the schnitzel under cold water.
- 16. Pat the schnitzel dry with a kitchen towel.
- 17. Cut each schnitzel in half across the middle.
- 18. Place a piece of cling film on your work surface.
- 19. Place a piece of schnitzel on top.
- 20. Cover the meat with another piece of cling film.
- 21. Pound the meat flat until it is thin.
- 22. Season the flat meat with salt.
- 23. Wash the broccoli under running water.
- 24. Separate the broccoli into small florets.
- 25. Drain the cooked potatoes in a colander.
- 26. Let the potatoes steam dry for a moment.
- 27. Peel the still warm potatoes.
- 28. Slice the peeled potatoes into thin rounds.
- 29. Put the broth into a pot.
- 30. Heat the broth.
- 31. Put the marinated cucumbers and shallots into a large bowl.
- 32. Add the potato slices.
- 33. Pour the hot broth over it.
- 34. Add the mustard.
- 35. Add the vinegar.
- 36. Add 2 tablespoons of oil.
- 37. Season the salad with salt to taste.
- 38. Season the salad with pepper to taste.
- 39. Mix all salad ingredients well.
- 40. Let the potato salad marinate.
- 41. Fill a pot with about 2 liters of water.
- 42. Add salt to the water.
- 43. Bring the salted water to a boil.
- 44. Put the broccoli into the boiling water.
- 45. Cook the broccoli for about 5 minutes.
- 46. Cook the broccoli until al dente.
- 47. Drain the broccoli in a colander.
- 48. Rinse the broccoli with cold water.
- 49. Heat 2 tablespoons of oil in a frying pan.
- 50. Set the heat to high.
- 51. Fry the schnitzel pieces on all sides.
- 52. Fry the schnitzel pieces for about 4 minutes.
- 53. Take the pan off the stove.
- 54. Sprinkle the schnitzel pieces with spices.
- 55. Cover the pan briefly.
- 56. Let the schnitzel pieces rest briefly.
- 57. Place the schnitzel pieces on the plates.
- 58. Place the potato salad on the plates.
- 59. Place the broccoli on the plates.
