  1. 1. Peel the pineapple and cut it into quarters. Remove the hard core from the center. Cut the fruit flesh into small cubes.
  2. 2. Wash the tomatoes thoroughly. Cut them into small cubes as well.
  3. 3. Halve the shallot and remove the outer skin. Cut the vegetable into very small pieces.
  4. 4. Halve the lime. Press the cut side down to extract the juice.
  5. 5. Wash the basil leaves and shake them dry. Pluck the leaves from the stems. Chop the leaves finely.
  6. 6. Heat a pan on high heat. Add one teaspoon of sugar and one tablespoon of water.
  7. 7. Wait until the water in the pan has completely evaporated.
  8. 8. Add the pineapple cubes to the hot pan. Season them with chili.
  9. 9. Fry the pineapple for about two minutes.
  10. 10. Deglaze the pan with two tablespoons of lime juice.
  11. 11. Reduce the heat to low. Let the pineapple continue to cook for about five minutes.
