🍽️ Crispy Schnitzel with Spicy Pineapple Salsa

Ingredients
- Pineapple 1 pc.
- Vine tomatoes 2 pcs.
- Shallots 1 pc.
- Organic Limes 1 pc.
- Basil, fresh 20 g
- Sugar 1 tsp
- Chili, ground 0.25 tsp
- Ham schnitzel from the top round of pork 600 g
- Salt pinch
- Pepper, black ground pinch
- Curry powder 1 tsp
- Oil 2 tbsp
- Olive oil 2 tbsp
Instructions
- 1. Peel the pineapple and cut it into quarters. Remove the hard core from the center. Cut the fruit flesh into small cubes.
- 2. Wash the tomatoes thoroughly. Cut them into small cubes as well.
- 3. Halve the shallot and remove the outer skin. Cut the vegetable into very small pieces.
- 4. Halve the lime. Press the cut side down to extract the juice.
- 5. Wash the basil leaves and shake them dry. Pluck the leaves from the stems. Chop the leaves finely.
- 6. Heat a pan on high heat. Add one teaspoon of sugar and one tablespoon of water.
- 7. Wait until the water in the pan has completely evaporated.
- 8. Add the pineapple cubes to the hot pan. Season them with chili.
- 9. Fry the pineapple for about two minutes.
- 10. Deglaze the pan with two tablespoons of lime juice.
- 11. Reduce the heat to low. Let the pineapple continue to cook for about five minutes.
- 12. Rinse the schnitzels under running water. Pat them completely dry with a kitchen towel.
- 13. Gently flatten the schnitzels.
- 14. Season the schnitzels with salt, pepper, and curry powder.
- 15. Heat oil in a separate pan.
- 16. Fry the schnitzels for about one minute on the first side.
- 17. Fry the schnitzels for about one minute on the second side.
- 18. Remove the pan with the schnitzels from the stove.
- 19. Let the schnitzels rest until you serve them.
- 20. Add the finely chopped basil leaves to the warm pineapple in the pan.
- 21. Add the diced tomatoes to the pineapple mixture.
- 22. Add the cut shallots to the pineapple mixture.
- 23. Season the pineapple salsa with olive oil, salt, and pepper.
- 24. Place the schnitzels on the plates.
- 25. Serve the spicy pineapple salsa next to the schnitzels.
