🥗 Crispy Schnitzel with Oven Fries and Cucumber Salad

Ingredients
- potatoes, mainly waxy 1 kg
- oil 10 tbsp
- salt pinch
- pepper, black ground pinch
- salad cucumbers 2 pcs.
- dill, fresh 20 g
- ham schnitzel from the top round of pork 600 g
- breadcrumbs 6 tbsp
- eggs 2 pcs.
- wheat flour, Type 405 4 tbsp
- vinegar 2 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan setting.
- 2. Wash the potatoes thoroughly.
- 3. Cut the unpeeled potatoes into sticks for fries.
- 4. Line a baking tray with baking paper.
- 5. Place the potato sticks on the tray.
- 6. Add 2 tablespoons of oil, salt, and pepper.
- 7. Mix everything well until the potatoes are evenly coated.
- 8. Bake the fries in the oven for about 20 minutes.
- 9. Wash the cucumber thoroughly.
- 10. Slice or shred the cucumber into very thin slices.
- 11. Place the cucumber slices in a bowl.
- 12. Sprinkle the cucumbers with a little salt.
- 13. Set the bowl aside to let the cucumbers sit.
- 14. Wash the dill.
- 15. Dry the dill with a cloth.
- 16. Finely chop the dill.
- 17. Rinse the schnitzels under cold water.
- 18. Dry the schnitzels with a kitchen towel.
- 19. Pound the schnitzels flat with the palm of your hand.
- 20. Lightly salt the schnitzels.
- 21. Fill a deep plate with breadcrumbs.
- 22. Whisk the eggs in a second plate.
- 23. Put flour in a third plate.
- 24. Heat 6 tablespoons of oil in a pan over medium heat.
- 25. Coat the schnitzels one by one in the flour.
- 26. Dip the floured schnitzels into the egg mixture.
- 27. Then roll the schnitzels in the breadcrumbs.
- 28. Press the coating lightly.
- 29. Fry the schnitzels in the pan on all sides.
- 30. Fry them for about 4 minutes.
- 31. Remove the cooked schnitzels from the pan.
- 32. Place them on a plate.
- 33. Let the schnitzels rest briefly.
- 34. Squeeze the cucumbers lightly.
- 35. Pour off the released water.
- 36. Stir the chopped dill into the cucumbers.
- 37. Add vinegar and 2 tablespoons of oil.
- 38. Season the salad with salt and pepper to taste.
- 39. Take the fries out of the oven.
- 40. Plate the fries, schnitzels, and salad.
