  1. 1. Preheat the oven to 160 degrees Celsius with top and bottom heat.
  2. 2. Wash the goose thoroughly and pat it dry with a kitchen towel.
  3. 3. Let the goose sit at room temperature for a while to warm up.
  4. 4. Cut the onion with the skin into large chunks.
  5. 5. Wash the orange and apple and cut them into eighths.
  6. 6. Wash the thyme and shake it dry.
  7. 7. Place the onion, apple, orange, and thyme into a bowl.
  8. 8. Season the mixture generously with salt and pepper.
  9. 9. Rub the goose inside and out thoroughly with salt and pepper.
  10. 10. Stuff the goose with the seasoned fruit and onion mixture.
  11. 11. Close the opening of the goose with toothpicks.
  12. 12. Tie the opening securely with kitchen twine.
  13. 13. Place the goose breast-side down on a wire rack.
  14. 14. Place the rack on the middle rack of the oven.
  15. 15. Place a baking sheet under the rack to catch dripping fat.
  16. 16. Bake the goose for about 3 to 4 hours until golden brown and crispy.
  17. 17. Turn the goose over after half the cooking time.
  18. 18. Increase the oven temperature to 220 degrees with grill function when 10 to 20 minutes remain.
  19. 19. Keep a close eye on the goose during this phase to prevent burning.
  20. 20. Carefully remove the goose from the oven.
  21. 21. Serve the goose whole or carved into portions.
