🍰 Quick Stracciatella Strawberry Parfait with Mango Sauce

Ingredients
- meringue kisses 8 pcs
- whipping cream 200 g
- powdered sugar 30 g
- salt pinch
- whipping aid 1 packet
- shaved chocolate, dark 100 g
- strawberries 500 g
- mango 400 g
Instructions
- 1. Carefully separate the wafer bases from the meringues.
- 2. Set the wafers aside.
- 3. Gently press down the meringues with a fork.
- 4. Whip the cream using a hand mixer with beaters.
- 5. Stir in the powdered sugar, salt, and cream stabilizer.
- 6. Continue whipping until the cream is stiff.
- 7. Gently fold the chocolate shavings and the whipped cream into the pressed meringues.
- 8. Line a loaf pan with cling film.
- 9. Wash the strawberries and remove the stems.
- 10. Puree 300 grams of the strawberries until smooth.
- 11. Spoon the strawberry puree and the Stracciatella mixture into the loaf pan in alternating layers.
- 12. Smooth the surface.
- 13. Tap the pan firmly against the work surface several times.
- 14. This removes large air bubbles from the mixture.
- 15. Freeze the parfait for at least 4 hours.
- 16. Peel the mango.
- 17. Cut the flesh away from the pit.
- 18. Puree the mango flesh until smooth.
- 19. Take the parfait out of the freezer about 10 minutes before serving.
- 20. Let it thaw slightly.
- 21. Slice the parfait.
- 22. Serve the slices with the remaining strawberries and the mango sauce.
- 23. Serve the wafers on the side as desired.
