🍽️ Quick Sausage Goulash with Fried Potato Dumplings

Ingredients
- onions, yellow 2 pcs.
- garlic cloves 2 pcs.
- pepper, red 2 pcs.
- organic lemons 0.5 pcs.
- chives, fresh 1 bunch
- oil for frying 3 tbsp
- salt pinch
- paprika, sweet 2 tbsp
- sugar 1 tsp
- beef broth 200 ml
- tomatoes, chopped 400 g
- potato dumplings 500 g
- sour cream 200 g
Instructions
- 1. Halve the onions and peel off the outer skin. Cut them into thin strips.
- 2. Peel the garlic and slice it into thin rounds.
- 3. Halve the bell pepper, remove the core and seeds, and slice the flesh into strips.
- 4. Cut the sausages into bite-sized pieces, roughly thumb-width thick.
- 5. Grate the fine zest of the lemon, avoiding the white pith.
- 6. Cut the chives into fine rings.
- 7. Heat one tablespoon of oil in a medium-sized pot.
- 8. Add the onions, garlic, and bell pepper strips to the pot.
- 9. Season with salt and fry the mixture vigorously for three minutes.
- 10. Add the sausages, paprika powder, and sugar.
- 11. Fry everything briefly until well combined.
- 12. Deglaze the mixture with beef broth.
- 13. Add the chopped tomatoes and half of the lemon zest to the sauce.
- 14. Cover the pot and let the goulash simmer for twenty minutes over medium heat.
- 15. Meanwhile, heat a large frying pan with the remaining oil.
- 16. Fry the potato dumplings in the pan until golden brown on all sides.
- 17. Stir half of the sour cream into the finished sauce.
- 18. Finally, adjust the seasoning of the sauce to taste.
- 19. Serve the goulash on plates alongside the fried potato dumplings.
- 20. Drizzle the remaining sour cream on top as a garnish.
