  1. 1. Cut the vegan Genießer block into small cubes.
  2. 2. Remove the green rind of the watermelon and cut the red flesh into cubes as well.
  3. 3. Wash the mint thoroughly and shake it dry.
  4. 4. Carefully pluck the small mint leaves from the stems.
  5. 5. Heat a non-stick pan without oil over medium heat.
  6. 6. Add the pine nuts to the hot pan.
  7. 7. Roast the pine nuts for about 3 to 5 minutes.
  8. 8. Shake the pan regularly to prevent the nuts from burning.
  9. 9. Squeeze the juice of half a lime into a small bowl.
  10. 10. Whisk the lime juice with a splash of olive oil.
  11. 11. Season the sauce with a pinch of salt and black pepper.
  12. 12. Take a large serving bowl.
  13. 13. Add the watermelon cubes to the bowl.
  14. 14. Add the cubed Genießer blocks.
  15. 15. Sprinkle the roasted pine nuts over the mixture.
  16. 16. Add the fresh mint leaves.
  17. 17. Gently mix all ingredients together.
  18. 18. Pour the lime dressing evenly over the salad.
  19. 19. Serve the salad immediately and enjoy!
