🥗 Quick Vegan Melon Salad

Ingredients
- Vegan feta cheese 200 g
- Watermelon 0.5 pc.
- Mint, fresh 10 g
- Pine nuts 50 g
- Organic limes 0.5 pc.
- Olive oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Cut the vegan Genießer block into small cubes.
- 2. Remove the green rind of the watermelon and cut the red flesh into cubes as well.
- 3. Wash the mint thoroughly and shake it dry.
- 4. Carefully pluck the small mint leaves from the stems.
- 5. Heat a non-stick pan without oil over medium heat.
- 6. Add the pine nuts to the hot pan.
- 7. Roast the pine nuts for about 3 to 5 minutes.
- 8. Shake the pan regularly to prevent the nuts from burning.
- 9. Squeeze the juice of half a lime into a small bowl.
- 10. Whisk the lime juice with a splash of olive oil.
- 11. Season the sauce with a pinch of salt and black pepper.
- 12. Take a large serving bowl.
- 13. Add the watermelon cubes to the bowl.
- 14. Add the cubed Genießer blocks.
- 15. Sprinkle the roasted pine nuts over the mixture.
- 16. Add the fresh mint leaves.
- 17. Gently mix all ingredients together.
- 18. Pour the lime dressing evenly over the salad.
- 19. Serve the salad immediately and enjoy!
