🍽️ Quick cucumber salad with roasted peanuts and coriander

Ingredients
- Mini Cucumbers 12 pcs
- Peanut Kernels 50 g
- Coriander, fresh 15 g
- Sunflower Oil 2 tbsp
- Soy Sauce 2 tbsp
- Brown Sugar 1 tbsp
- Organic Limes 1 pc
- Garlic Cloves 1 pc
- Chili Flakes Pinch
Instructions
- 1. Wash the cucumbers thoroughly.
- 2. Cut the cucumbers into thin strips.
- 3. Roughly chop the peanut kernels.
- 4. Wash the coriander.
- 5. Shake the coriander dry.
- 6. Finely chop the coriander.
- 7. Place the cucumber strips, peanuts, and coriander into a large bowl.
- 8. Take a smaller bowl for the dressing.
- 9. Whisk together the sunflower oil, soy sauce, and brown sugar in the small bowl.
- 10. Rinse the lime under hot water.
- 11. Dry the lime.
- 12. Finely grate the lime zest.
- 13. Squeeze the juice from the lime.
- 14. Peel the garlic.
- 15. Mince the garlic very finely.
- 16. Add the lime juice, lime zest, and chili flakes to the dressing bowl.
- 17. Season the dressing to taste with additional chili flakes.
- 18. Toss the dressing with the cucumber strips.
- 19. Serve the salad garnished with the peanut kernels and coriander.
