  2. 2. Cut the cucumbers into thin strips.
  3. 3. Roughly chop the peanut kernels.
  4. 4. Wash the coriander.
  5. 5. Shake the coriander dry.
  6. 6. Finely chop the coriander.
  7. 7. Place the cucumber strips, peanuts, and coriander into a large bowl.
  8. 8. Take a smaller bowl for the dressing.
  9. 9. Whisk together the sunflower oil, soy sauce, and brown sugar in the small bowl.
  10. 10. Rinse the lime under hot water.
  11. 11. Dry the lime.
  12. 12. Finely grate the lime zest.
  13. 13. Squeeze the juice from the lime.
  14. 14. Peel the garlic.
  15. 15. Mince the garlic very finely.
  16. 16. Add the lime juice, lime zest, and chili flakes to the dressing bowl.
  17. 17. Season the dressing to taste with additional chili flakes.
  18. 18. Toss the dressing with the cucumber strips.
  19. 19. Serve the salad garnished with the peanut kernels and coriander.
