🍰 Quick Berry Cake with Mint and Basil

Ingredients
- Strawberries 300 g
- Raspberries, fresh 100 g
- Blueberries, fresh 100 g
- Organic Lemon 1 pc.
- Mint, fresh 5 g
- Basil, fresh 5 g
- Honey 2 tbsp
- crème fraîche 200 g
- Quark 40 % fat in total 250 g
- Mix batter base 1 pc.
Instructions
- 1. Wash the berries thoroughly.
- 2. Remove the stems from the strawberries and cut them in half.
- 3. Wash the lemon under hot water.
- 4. Grate about one teaspoon of lemon zest.
- 5. Cut the lemon in half.
- 6. Squeeze the juice from the lemon.
- 7. Wash the mint and the basil.
- 8. Shake the herbs dry.
- 9. Pluck the leaves from the stems.
- 10. Place the berries in a pot.
- 11. Add one tablespoon of honey.
- 12. Add one tablespoon of lemon juice.
- 13. Mix the ingredients well.
- 14. Warm the mixture on medium heat.
- 15. Let the berries warm up for about five minutes.
- 16. Let the berries cool down slightly.
- 17. Meanwhile, take a bowl.
- 18. Add crème fraîche to the bowl.
- 19. Add quark (a type of fresh cheese).
- 20. Add the grated lemon zest.
- 21. Add three tablespoons of lemon juice.
- 22. Add one tablespoon of honey.
- 23. Whisk the cream ingredients well.
- 24. Take the batter base.
- 25. Spread the cream evenly over the batter base.
- 26. Distribute the berries on the cream.
- 27. Drizzle the cake with a little honey if desired.
- 28. Decorate the cake with mint and basil.
- 29. Serve the quick berry cake.
