Ingredients
- Lemons 1 pc
- Wheat flour, Type 405 150 g
- Almonds, ground 140 g
- Powdered sugar 60 g
- Vanilla sugar 1 packet
- Salt pinch
- Eggs 2 pc
- Butter 150 g
- Apricot jam 2 tbsp
- Raspberry jam 2 tbsp
Instructions
- 1. Rinse the lemon under hot water.
- 2. Grate about 1 teaspoon of fine lemon zest.
- 3. Add flour, ground almonds, 50 grams of powdered sugar, vanilla sugar, and a pinch of salt to a bowl.
- 4. Mix the dry ingredients together.
- 5. Separate the eggs and use the egg whites for something else.
- 6. Add the egg yolk, the soft butter, and the lemon zest to the flour mixture.
- 7. Knead everything into a smooth dough.
- 8. Place the dough in the refrigerator for about 30 minutes.
- 9. Preheat the oven to 160 degrees Celsius fan mode.
- 10. Line a baking tray with baking paper.
- 11. Divide the dough into four small balls.
- 12. Shape the dough balls into rolls about 30 centimeters long on the baking paper.
- 13. Press the rolls slightly flat with your hand.
- 14. Use the handle of a spoon to press a groove along the center of the entire length.
- 15. Fill the grooves with jam.
- 16. Bake the cookies for about 18 minutes in the oven.
- 17. Make sure the cookies do not become too dark.
- 18. Let the cookie sticks cool down.
- 19. Sprinkle the cooled sticks with powdered sugar.
- 20. Cut the sticks into pieces about 2 centimeters in size.
- 21. Serve the cookies and enjoy them.
