  1. 1. Rinse the lemon under hot water.
  2. 2. Grate about 1 teaspoon of fine lemon zest.
  3. 3. Add flour, ground almonds, 50 grams of powdered sugar, vanilla sugar, and a pinch of salt to a bowl.
  4. 4. Mix the dry ingredients together.
  5. 5. Separate the eggs and use the egg whites for something else.
  6. 6. Add the egg yolk, the soft butter, and the lemon zest to the flour mixture.
  7. 7. Knead everything into a smooth dough.
  8. 8. Place the dough in the refrigerator for about 30 minutes.
  9. 9. Preheat the oven to 160 degrees Celsius fan mode.
  10. 10. Line a baking tray with baking paper.
  11. 11. Divide the dough into four small balls.
  12. 12. Shape the dough balls into rolls about 30 centimeters long on the baking paper.
  13. 13. Press the rolls slightly flat with your hand.
  14. 14. Use the handle of a spoon to press a groove along the center of the entire length.
  15. 15. Fill the grooves with jam.
  16. 16. Bake the cookies for about 18 minutes in the oven.
  17. 17. Make sure the cookies do not become too dark.
  18. 18. Let the cookie sticks cool down.
  19. 19. Sprinkle the cooled sticks with powdered sugar.
  20. 20. Cut the sticks into pieces about 2 centimeters in size.
