  1. 1. Bring the beef broth to a boil in a pot.
  2. 2. Wash the broccoli and remove the tough stem.
  3. 3. Break the broccoli into small florets.
  4. 4. Peel the carrots and trim the ends.
  5. 5. Halve the carrots lengthwise and slice them thinly.
  6. 6. Wash the spring onions and shake off excess water.
  7. 7. Remove the root ends of the spring onions.
  8. 8. Slice the spring onions into thin rings.
  9. 9. Add the carrot slices to the hot broth.
  10. 10. Simmer the carrots over medium heat for about 5 minutes.
  11. 11. Add the broccoli to the broth.
  12. 12. Cook the broccoli for about 2 minutes.
  13. 13. Add the spring onions, peas, and noodles to the pot.
  14. 14. Cook everything for another 2 minutes.
  15. 15. Wash the parsley and shake off excess water.
  16. 16. Pluck the parsley leaves from the stems.
  17. 17. Finely chop the parsley.
  18. 18. Season the soup with salt and pepper to taste.
  19. 19. Pour the soup into bowls.
  20. 20. Garnish the soup with the chopped parsley.
