  1. 1. Peel the garlic and ginger and chop both finely.
  2. 2. Halve the chili peppers, remove the stem and seeds, and chop them finely.
  3. 3. Wash the spring onions, shake them dry, and cut off the root ends.
  4. 4. Cut the white and green parts of the spring onions separately into fine rings.
  5. 5. Wash the pak choi, shake it dry, and slice off the hard base thinly.
  6. 6. Halve the prepared pak choi.
  7. 7. Clean the mushrooms if necessary with a kitchen towel and slice them.
  8. 8. Pour about 1 liter of boiling water over the mie noodles in a bowl.
  9. 9. Let the mie noodles cook in the hot water for about 4 minutes.
  10. 10. Then drain the noodles in a sieve.
  11. 11. Heat 2 tablespoons of sesame oil in a pot over medium heat.
  12. 12. Fry half of the garlic, the ginger, the chili peppers, and the white parts of the spring onions in it for approx. 1-2 minutes.
  13. 13. Add the miso paste and fry it briefly.
  14. 14. Deglaze the mixture with beef broth.
  15. 15. Let the miso ramen broth simmer on low heat for approx. 5 minutes.
  16. 16. Then season the broth with soy sauce.
  17. 17. Heat 2 tablespoons of sesame oil in a frying pan over high heat.
  18. 18. Fry the pak choi and mushrooms in it for approx. 5 minutes.
  19. 19. Deglaze the vegetables with 2 tablespoons of soy sauce.
  20. 20. Remove the pak choi and mushrooms from the pan and set them aside.
  21. 21. Reheat the pan with 2 tablespoons of sesame oil over high heat.
  22. 22. Fry the minced meat with the remaining garlic and ginger for approx. 5 minutes.
  23. 23. Deglaze the meat with 3 tablespoons of soy sauce and season to taste.
  24. 24. Distribute the mie noodles onto bowls for serving.
  25. 25. Pour the miso broth over the noodles.
  26. 26. Distribute the pak choi, mushrooms, and minced meat onto the bowls.
  27. 27. Garnish the quick miso ramen with sesame and the green parts of the spring onions.
