🍽️ Quick Miso Ramen with Minced Meat

Ingredients
- garlic cloves 2 pcs.
- ginger, fresh 20 g
- chili pepper mix 1 pcs.
- spring onions 0.5 bunch
- Pak Choi 2 pcs.
- mushrooms, brown 250 g
- Mie noodles 200 g
- sesame oil 6 tbsp
- miso paste, light 2 tbsp
- beef broth 1 L
- soy sauce 7 tbsp
- beef mince 400 g
- sesame, white 1 tbsp
Instructions
- 1. Peel the garlic and ginger and chop both finely.
- 2. Halve the chili peppers, remove the stem and seeds, and chop them finely.
- 3. Wash the spring onions, shake them dry, and cut off the root ends.
- 4. Cut the white and green parts of the spring onions separately into fine rings.
- 5. Wash the pak choi, shake it dry, and slice off the hard base thinly.
- 6. Halve the prepared pak choi.
- 7. Clean the mushrooms if necessary with a kitchen towel and slice them.
- 8. Pour about 1 liter of boiling water over the mie noodles in a bowl.
- 9. Let the mie noodles cook in the hot water for about 4 minutes.
- 10. Then drain the noodles in a sieve.
- 11. Heat 2 tablespoons of sesame oil in a pot over medium heat.
- 12. Fry half of the garlic, the ginger, the chili peppers, and the white parts of the spring onions in it for approx. 1-2 minutes.
- 13. Add the miso paste and fry it briefly.
- 14. Deglaze the mixture with beef broth.
- 15. Let the miso ramen broth simmer on low heat for approx. 5 minutes.
- 16. Then season the broth with soy sauce.
- 17. Heat 2 tablespoons of sesame oil in a frying pan over high heat.
- 18. Fry the pak choi and mushrooms in it for approx. 5 minutes.
- 19. Deglaze the vegetables with 2 tablespoons of soy sauce.
- 20. Remove the pak choi and mushrooms from the pan and set them aside.
- 21. Reheat the pan with 2 tablespoons of sesame oil over high heat.
- 22. Fry the minced meat with the remaining garlic and ginger for approx. 5 minutes.
- 23. Deglaze the meat with 3 tablespoons of soy sauce and season to taste.
- 24. Distribute the mie noodles onto bowls for serving.
- 25. Pour the miso broth over the noodles.
- 26. Distribute the pak choi, mushrooms, and minced meat onto the bowls.
- 27. Garnish the quick miso ramen with sesame and the green parts of the spring onions.
