  1. 1. Preheat the oven to 190 degrees Celsius with top and bottom heat.
  2. 2. Toast the ground hazelnuts in a medium pan without fat until golden brown.
  3. 3. Remove the hazelnuts from the pan and place them on a plate.
  4. 4. Wipe the empty pan dry.
  5. 5. Add sugar, cinnamon, vanilla extract, butter, and 100 milliliters of water to the pan.
  6. 6. Let the mixture simmer for about 3 minutes.
  7. 7. Wash the lemon thoroughly.
  8. 8. Grate the lemon zest finely.
  9. 9. Cut the lemon in half and squeeze out the juice.
  10. 10. Add the lemon zest and lemon juice to the pan.
  11. 11. Season the mixture with a pinch of salt.
  12. 12. Return the toasted hazelnuts to the pan.
  13. 13. Stir everything together well.
  14. 14. Unroll the puff pastry.
  15. 15. Spread the hazelnut cinnamon mixture evenly over the puff pastry.
  16. 16. Roll the puff pastry tightly starting from the long side.
  17. 17. Cut the roll into 8 equal pieces.
  18. 18. Press the rolls in the middle with the handle of a spoon.
  19. 19. Sprinkle the rolls with powdered sugar.
  20. 20. Bake the rolls in the oven for about 20 minutes until golden brown.
