  1. 1. Wash the parsley and dill under running water.
  2. 2. Shake off excess water and remove the thick stems.
  3. 3. Finely chop the herbs.
  4. 4. Wash the lemon under hot water.
  5. 5. Grate about one teaspoon of fine zest from the lemon.
  6. 6. Cut the lemon in half and squeeze out the juice.
  7. 7. In a bowl, mix crème fraîche with two tablespoons of mayonnaise.
  8. 8. Add one tablespoon of lemon juice and the chopped herbs.
  9. 9. Season the sauce to taste with salt and pepper.
  10. 10. Heat two tablespoons of oil in a pan over high heat.
  11. 11. Fry the fish sticks in it for about five minutes until golden brown.
  12. 12. Let the fish sticks drain on kitchen paper.
  13. 13. Reheat the same pan with two tablespoons of butter over high heat.
  14. 14. Add the frozen peas to the pan.
  15. 15. Toss the peas for about four minutes.
  16. 16. Season the peas with the lemon zest, one tablespoon of lemon juice, salt, and pepper.
  17. 17. Mash the peas roughly in the pan using a potato masher.
  18. 18. Spread the wraps thinly with herb remoulade.
  19. 19. Top the wraps with the mashed peas and the fish sticks.
  20. 20. Roll up the wraps tightly.
  21. 21. Serve the wraps immediately.
