Ingredients
- yellow onions 2 pcs.
- garlic cloves 1 pcs.
- mozzarella 1 pcs.
- eggs 1 pcs.
- oil 1 tbsp.
- Gouda, grated 100 g
- salt pinch
- pepper, black ground pinch
- paprika, sweet mild pinch
- puff pastry 1 pcs.
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Halve the onions and peel them.
- 3. Dice the onions finely.
- 4. Peel the garlic and chop it.
- 5. Cut the mozzarella into small cubes.
- 6. Separate the egg yolks from the egg whites.
- 7. Heat oil in a pan over high heat.
- 8. Fry the onions and garlic for about 2 minutes.
- 9. Let the onion and garlic mixture cool down.
- 10. Mix the cooled mixture with the Gouda and the mozzarella.
- 11. Season the filling with salt, pepper, and paprika.
- 12. Roll out the dough flat.
- 13. Line a baking tray with baking paper.
- 14. Cut the dough into 8 rectangles.
- 15. Divide the cheese filling into 8 equal portions.
- 16. Shape the portions into small balls using your hands.
- 17. Place one cheese ball on each dough rectangle.
- 18. Fold the dough over the filling to form a triangle.
- 19. Press the edges of the triangle firmly together.
- 20. Fold the two bottom corners of the triangle upwards.
- 21. Crimp the edges in a wavy pattern between your fingers to seal.
- 22. Place the finished empanadas on the baking tray.
- 23. Lightly beat the egg yolks with a fork.
- 24. Brush the empanadas with the egg yolk.
- 25. Bake the empanadas in the oven for 15 to 20 minutes.
- 26. Remove them when they are golden brown and crispy.
- 27. Serve the empanadas hot or lukewarm.
