  1. 1. Halve the onions and peel them. Cut them into coarse cubes. Crush the garlic cloves with the flat side of the knife. Rinse the thyme and rosemary under cold water and dry the herbs thoroughly. Wash the meat and pat it dry with kitchen paper.
  2. 2. Heat the oil in a casserole dish over high heat. Sear the meat for about 4 minutes. Season it with salt and pepper. Remove the meat from the pot and set it aside.
  3. 3. Reheat the pot over high heat. Sauté the onions, garlic, thyme, and rosemary in the meat juices for about 4 minutes. Stir in the tomato paste and cook it for 2 minutes. Return the meat to the pot. Deglaze with red wine. Let the mixture boil for 2 minutes. Add the broth. Add the bay leaf. Season with salt, pepper, cinnamon, and a pinch of sugar. Simmer the dish covered on low heat for 1 to 1.5 hours until the meat is tender.
  4. 4. Wash the potatoes thoroughly. Bring them to a boil in a pot of salted water. Cook them covered for about 25 minutes. Drain the water and let the potatoes drip dry in a sieve. Peel the still warm potatoes. Cut them into quarters if desired.
  5. 5. Heat 3 tablespoons of sugar in a frying pan over high heat. Caramelize the sugar for about 2 minutes. Add the potatoes and toss them for 2 minutes. Deglaze with vinegar. Season with salt and pepper.
  6. 6. Remove the garlic and herbs from the stew. Adjust the sauce to taste with salt and pepper. Serve the meat with the caramelized potatoes. Enjoy your meal!
