  1. 1. Heat the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into a bowl.
  3. 3. Dissolve the yeast together with 1 tbsp of sugar in the lukewarm milk.
  4. 4. Let the yeast milk stand in the bowl for about 15 minutes covered.
  5. 5. Mix the remaining sugar, flour, salt, and cut-up butter in a separate bowl.
  6. 6. Add the yeast milk and the eggs to the flour mixture.
  7. 7. Knead everything into a smooth dough.
  8. 8. Cover the bowl with a clean kitchen towel.
  9. 9. Let the dough rise in a warm place for about 1 hour until it has roughly doubled in size.
  10. 10. Roll out the dough on a floured work surface to a thickness of about 0.5–1 cm.
  11. 11. Cut the dough into diamonds with 3 cm side lengths.
  12. 12. Let the dough diamonds rise again for about 10 minutes.
  13. 13. Heat oil in a pot to about 170 °C.
  14. 14. Fry the dough diamonds in batches until golden brown.
  15. 15. Remove them with a slotted spoon.
  16. 16. Let them drain on kitchen paper.
  17. 17. Sprinkle the warm pastries with powdered sugar.
  18. 18. Serve them and enjoy!
