🍰 Crispy Yeast Diamonds with Powdered Sugar

Ingredients
- milk 300 ml
- yeast, fresh 0.5 pcs
- sugar 1 tbsp
- wheat flour, Type 405 600 g
- salt pinch
- butter 150 g
- eggs 3 pcs
- oil 1 L
- powdered sugar 4 tbsp
Instructions
- 1. Heat the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into a bowl.
- 3. Dissolve the yeast together with 1 tbsp of sugar in the lukewarm milk.
- 4. Let the yeast milk stand in the bowl for about 15 minutes covered.
- 5. Mix the remaining sugar, flour, salt, and cut-up butter in a separate bowl.
- 6. Add the yeast milk and the eggs to the flour mixture.
- 7. Knead everything into a smooth dough.
- 8. Cover the bowl with a clean kitchen towel.
- 9. Let the dough rise in a warm place for about 1 hour until it has roughly doubled in size.
- 10. Roll out the dough on a floured work surface to a thickness of about 0.5–1 cm.
- 11. Cut the dough into diamonds with 3 cm side lengths.
- 12. Let the dough diamonds rise again for about 10 minutes.
- 13. Heat oil in a pot to about 170 °C.
- 14. Fry the dough diamonds in batches until golden brown.
- 15. Remove them with a slotted spoon.
- 16. Let them drain on kitchen paper.
- 17. Sprinkle the warm pastries with powdered sugar.
- 18. Serve them and enjoy!
