  1. 1. Fill a large pot with about 2 liters of water and add a generous pinch of salt.
  2. 2. Bring the water to a boil on the stove.
  3. 3. Thoroughly wash the white asparagus under running water.
  4. 4. Peel the white asparagus using a vegetable peeler.
  5. 5. Trim off the hard, woody ends from the white asparagus.
  6. 6. Also wash the green asparagus thoroughly.
  7. 7. Cut or snap off the woody ends from the green asparagus.
  8. 8. Add the prepared asparagus to the boiling salted water.
  9. 9. Cook the asparagus for about 8 minutes until it is tender-crisp.
  10. 10. Remove the asparagus from the pot using a slotted spoon.
  11. 11. Hold the asparagus immediately under cold running water to stop the cooking process (this is called shocking).
  12. 12. Let the asparagus cool down on a plate or kitchen towel.
  13. 13. Take a slice of ham and lay it flat on a work surface.
  14. 14. Place one teaspoon of cream cheese onto the ham slice.
  15. 15. Add a bit of horseradish cream (a creamy sauce made from horseradish and cream) onto the cream cheese layer.
  16. 16. Season the filling with a pinch of freshly ground pepper.
  17. 17. Place four asparagus spears side by side at the bottom edge of the ham slice.
  18. 18. Roll the ham tightly around the asparagus spears.
  19. 19. Repeat this process for all remaining ham and asparagus portions.
  20. 20. Arrange the finished rolls on a plate and serve them as small finger food snacks.
