Ingredients
- Salt pinch
- green asparagus 1 bunch
- white asparagus 1 bunch
- cooked ham 100 g
- cream cheese, plain 6 tsp
- cream horseradish 4 tsp
- pepper, black ground pinch
Instructions
- 1. Fill a large pot with about 2 liters of water and add a generous pinch of salt.
- 2. Bring the water to a boil on the stove.
- 3. Thoroughly wash the white asparagus under running water.
- 4. Peel the white asparagus using a vegetable peeler.
- 5. Trim off the hard, woody ends from the white asparagus.
- 6. Also wash the green asparagus thoroughly.
- 7. Cut or snap off the woody ends from the green asparagus.
- 8. Add the prepared asparagus to the boiling salted water.
- 9. Cook the asparagus for about 8 minutes until it is tender-crisp.
- 10. Remove the asparagus from the pot using a slotted spoon.
- 11. Hold the asparagus immediately under cold running water to stop the cooking process (this is called shocking).
- 12. Let the asparagus cool down on a plate or kitchen towel.
- 13. Take a slice of ham and lay it flat on a work surface.
- 14. Place one teaspoon of cream cheese onto the ham slice.
- 15. Add a bit of horseradish cream (a creamy sauce made from horseradish and cream) onto the cream cheese layer.
- 16. Season the filling with a pinch of freshly ground pepper.
- 17. Place four asparagus spears side by side at the bottom edge of the ham slice.
- 18. Roll the ham tightly around the asparagus spears.
- 19. Repeat this process for all remaining ham and asparagus portions.
- 20. Arrange the finished rolls on a plate and serve them as small finger food snacks.
