  4. 4. Clean the mushrooms with a kitchen towel.

  6. 6. Wash the thyme and pat it dry.
  7. 7. Strip the thyme leaves from the stems.
  8. 8. Tear the ham into small pieces.
  9. 9. Remove the hard rind from the Gruyère cheese.
  10. 10. Grate the Gruyère cheese finely.
  11. 11. Melt the butter in a frying pan over high heat.
  12. 12. Fry the onions and mushrooms together for about 6 minutes.
  13. 13. Add the thyme to the pan.
  14. 14. Season the mixture with salt and pepper.
  15. 15. Let the filling cool down.
  16. 16. Mix the cooled filling with the ham and the grated cheese.
  17. 17. Whisk the eggs, milk, and crème fraîche together in a bowl.

  20. 20. Grease a quiche pan with a diameter of 28 cm.

  22. 22. Form a rim about 2 cm high from the pastry.
