🍽️ Crispy Quiche with Ham and Mushrooms

Ingredients
- onions, yellow 2 pcs.
- white button mushrooms 500 g
- thyme, fresh 5 g
- cooked ham 200 g
- Gruyère cheese in a block 200 g
- butter 2 tbsp
- salt pinch
- pepper, black ground pinch
- eggs 3 pcs.
- milk 50 ml
- crème fraîche 200 g
- puff pastry 1 pcs.
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Halve the onions and peel off the skin.
- 3. Slice the onions into thin rings.
- 4. Clean the mushrooms with a kitchen towel.
- 5. Slice the mushrooms.
- 6. Wash the thyme and pat it dry.
- 7. Strip the thyme leaves from the stems.
- 8. Tear the ham into small pieces.
- 9. Remove the hard rind from the Gruyère cheese.
- 10. Grate the Gruyère cheese finely.
- 11. Melt the butter in a frying pan over high heat.
- 12. Fry the onions and mushrooms together for about 6 minutes.
- 13. Add the thyme to the pan.
- 14. Season the mixture with salt and pepper.
- 15. Let the filling cool down.
- 16. Mix the cooled filling with the ham and the grated cheese.
- 17. Whisk the eggs, milk, and crème fraîche together in a bowl.
- 18. Season the egg milk with salt and pepper.
- 19. Roll out the puff pastry.
- 20. Grease a quiche pan with a diameter of 28 cm.
- 21. Line the pan with the puff pastry.
- 22. Form a rim about 2 cm high from the pastry.
- 23. Distribute the ham-mushroom-cheese mixture evenly over the pastry.
- 24. Pour the egg milk over the filling.
- 25. Bake the quiche in the lower part of the oven for about 30 to 35 minutes until golden brown.
- 26. Serve the quiche hot or cold.
