Instructions

  1. 1. Preheat your oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Place the puff pastry on a baking sheet and brush it with the melted butter.
  3. 3. Mix 50 grams of sugar with half a teaspoon of cinnamon and sprinkle this mixture evenly over the pastry.
  4. 4. Bake the pastry for about 15 minutes in the preheated oven until the surface is caramelized and golden brown.
  5. 5. Remove the puff pastry from the oven and let it cool completely.
  6. 6. Add the nut mixture, 50 grams of sugar, a pinch of cinnamon, and some water to a non-stick pan.
  7. 7. Turn the stove to the highest setting and stir constantly until the water has evaporated.
  8. 8. Reduce the heat to medium and let the sugar caramelize further until it coats the nuts.
  9. 9. Remove the nuts from the pan and spread them out on baking paper or foil to cool down.
  10. 10. Coarsely chop the cooled caramelized nuts together with the pistachios.
  11. 11. Whisk the Greek yogurt in a bowl with the honey, orange paste, and vanilla extract.
  12. 12. Crush the cooled puff pastry sheet into coarse, irregular pieces.
  13. 13. Place a spoonful of the yogurt cream into the bottom of your dessert glasses.
  14. 14. Layer the crunchy nuts and the puff pastry pieces alternately into the glasses.
  15. 15. Add a little more yogurt cream on top to hold everything together nicely.
  16. 16. Serve the dessert best immediately after layering to keep the puff pastry crispy.
