🍝 Hand-cut Noodles with Spicy Chili Oil

Ingredients
- all-purpose flour, Type 405 500 g
- water 250 ml
- salt 1 tsp
- zucchini 1 pc
- tofu, plain 200 g
- cornstarch 1 tbsp
- chili, ground 1 tbsp
- green onions 0.5 bunch
- garlic cloves 1 pc
- hot pepper mix 1 pc
- oil 6 tbsp
- soy sauce 2 tbsp
- agave syrup 1 tsp
Instructions
- 1. Put flour, water, and one teaspoon of salt into a bowl.
- 2. Knead the ingredients for about five minutes until you have a smooth dough.
- 3. Let the dough rest for a short moment.
- 4. Wash the zucchini and cut it into rough chunks.
- 5. Crumble the tofu into rough pieces using your hands.
- 6. Mix the tofu in a bowl with cornstarch and chili.
- 7. Wash the spring onions and cut off the root ends.
- 8. Slice the spring onions into thin rings.
- 9. Set aside about one handful of the green rings.
- 10. Peel the garlic and chop it finely.
- 11. Slice the peppers, including the seeds, into thin rings.
- 12. Mix the garlic, peppers, and the rest of the spring onions in a bowl with one tablespoon of chili powder.
- 13. Heat four tablespoons of oil in a pan over high heat.
- 14. Pour the hot oil directly over the spice mixture.
- 15. Stir the chili oil well with soy sauce and agave syrup.
- 16. Bring four liters of salted water to a boil in a pot.
- 17. Cut the noodle dough into small pieces directly over the pot using kitchen scissors.
- 18. Let the noodles fall into the boiling water.
- 19. Cook the noodles for about three minutes until they float to the surface.
- 20. Drain the noodles in a colander and let them drip dry.
- 21. Heat two tablespoons of oil in the pan over high heat.
- 22. Fry the tofu and zucchini for about five minutes.
- 23. Add the noodles and toss everything for two minutes.
- 24. Add the chili oil to the pan and mix it well with the noodles.
- 25. Finally, season the dish to taste with the spices.
- 26. Distribute the noodles onto plates.
- 27. Drizzle the remaining chili oil over them.
- 28. Garnish the noodles with the green spring onion rings.
- 29. Serve the dish and enjoy your meal!
