🍽️ Savory Pork Tenderloin with Pineapple Stir-Fry and Rice

Ingredients
- Pork fillet 600 g
- Ginger, fresh 20 g
- Garlic cloves 2 pcs.
- Oil 80 ml
- Chili, ground pinch
- Spring onions 1 bunch
- Pepper, red 2 pcs.
- Pineapple pieces from the can 340 g
- Long-grain rice 300 g
- Salt pinch
- Cornstarch 1 tsp
- Water 4 tbsp
- Soy sauce 2 tbsp
- Pepper, black ground pinch
Instructions
- 1. Rinse the pork tenderloin under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into slices about 0.5 cm thick.
- 3. Peel the ginger and garlic cloves and dice them finely.
- 4. Mix oil with the ginger, garlic, and chili in a bowl.
- 5. Place the meat in the marinade and set it aside.
- 6. Wash the spring onions, shake off excess water, and cut off the roots.
- 7. Cut the spring onions into rings about 1 cm wide.
- 8. Wash the peppers, halve them, and remove the core and seeds.
- 9. Cut the peppers into strips about 1 cm wide.
- 10. Place the pineapple in a sieve and catch the juice (approx. 200 ml).
- 11. Place the rice in a pot and cover it with approx. 450 ml of salted water.
- 12. Bring the water to a boil.
- 13. Reduce the heat to low to medium and let the rice cook covered for approx. 10 minutes.
- 14. Remove the meat from the marinade and place it on a plate.
- 15. Pour the marinade oil into a pan or wok and heat it over medium heat.
- 16. Fry the tenderloin in the hot oil for approx. 3 minutes.
- 17. Remove the meat from the pan and set it aside.
- 18. Do not clean the pan.
- 19. Reheat the pan over medium heat.
- 20. Sauté the peppers and spring onions for approx. 3 minutes.
- 21. Add the pineapple and cook everything for another 1 minute.
- 22. Mix cornstarch with a little water in a small bowl.
- 23. Deglaze the vegetables with the collected pineapple juice.
- 24. Stir the cornstarch-water mixture into the vegetables.
- 25. Return the pork tenderloin to the pan with the vegetables.
- 26. Season the dish with soy sauce and pepper to taste.
- 27. Plate the meat with the vegetables and rice.
