  1. 1. Bring five liters of water with salt to a boil in a large pot.
  2. 2. Cook the wide noodles in the boiling salted water for about nine minutes until they are al dente.
  3. 3. Drain the noodles in a colander and let them drain well.
  4. 4. Peel the garlic and the ginger and chop both finely.
  5. 5. Wash the peppers, remove the stem, and chop the peppers roughly, including the seeds.
  6. 6. Wash the cilantro, shake it dry, and pick the leaves off the stems.
  7. 7. Heat six tablespoons of oil in a frying pan over high heat.
  8. 8. Fry the garlic and ginger in the hot oil for about thirty seconds.
  9. 9. Remove the pan from the heat.
  10. 10. Add the chopped peppers and three tablespoons of chili powder to the hot oil and mix everything well.
  11. 11. Season the mixture with one tablespoon of soy sauce and one teaspoon of vinegar.
  12. 12. Mix the drained wide noodles in a pot with the chili oil.
  13. 13. Taste the noodles one last time to adjust the seasoning.
  14. 14. Serve the spicy noodles on plates.
  15. 15. Garnish the noodles with the fresh cilantro leaves and serve.
