🍝 Spicy Noodles with Chili Oil

Ingredients
- Salt Pinch
- Ribbon Noodles 500 g
- Garlic Cloves 2 pcs.
- Ginger, fresh 5 g
- Chili Mix 4 pcs.
- Cilantro, fresh 5 g
- Oil 5 tbsp
- Chili, ground 3 tbsp
- Soy Sauce 1 tbsp
- Vinegar 1 tsp
Instructions
- 1. Bring five liters of water with salt to a boil in a large pot.
- 2. Cook the wide noodles in the boiling salted water for about nine minutes until they are al dente.
- 3. Drain the noodles in a colander and let them drain well.
- 4. Peel the garlic and the ginger and chop both finely.
- 5. Wash the peppers, remove the stem, and chop the peppers roughly, including the seeds.
- 6. Wash the cilantro, shake it dry, and pick the leaves off the stems.
- 7. Heat six tablespoons of oil in a frying pan over high heat.
- 8. Fry the garlic and ginger in the hot oil for about thirty seconds.
- 9. Remove the pan from the heat.
- 10. Add the chopped peppers and three tablespoons of chili powder to the hot oil and mix everything well.
- 11. Season the mixture with one tablespoon of soy sauce and one teaspoon of vinegar.
- 12. Mix the drained wide noodles in a pot with the chili oil.
- 13. Taste the noodles one last time to adjust the seasoning.
- 14. Serve the spicy noodles on plates.
- 15. Garnish the noodles with the fresh cilantro leaves and serve.
