🍲 Hearty Sauerkraut Soup with Crispy Smoked Tofu

Ingredients
- red bell pepper 1 pc.
- yellow onions 1 pc.
- garlic cloves 2 pc.
- sauerkraut 500 g
- sunflower oil 3 tbsp
- vegetable broth 1 L
- salt pinch
- black ground pepper pinch
- dried marjoram 1 tsp
- cumin 1 tsp
- dried bay leaves 1 pc.
- smoked tofu 175 g
- sweet paprika powder 1 tsp
- soy sauce 1 tbsp
Instructions
- 1. Wash the bell pepper thoroughly. Remove the stem and seeds. Cut the vegetable into small cubes.
- 2. Peel the onion. Cut it in half and dice it finely.
- 3. Peel the garlic cloves. Mince them very finely.
- 4. Place the sauerkraut in a colander. Squeeze it lightly to remove excess liquid.
- 5. Heat one tablespoon of oil in a pot over medium heat.
- 6. Fry the bell pepper cubes, onions, and garlic for about five minutes.
- 7. Add the squeezed sauerkraut to the pot. Fry it for another two minutes.
- 8. Deglaze the mixture with vegetable broth.
- 9. Season the soup with marjoram, cumin, a bay leaf, salt, and pepper.
- 10. Let the soup simmer covered on low heat for about 30 minutes.
- 11. Slice the smoked tofu into very thin slices.
- 12. Heat the remaining oil in a frying pan over high heat.
- 13. Fry the tofu slices for about five minutes until golden brown.
- 14. Add paprika powder. Deglaze the tofu with soy sauce.
- 15. Remove the bay leaf from the finished soup.
- 16. Serve the sauerkraut soup. Distribute the fried smoked tofu on top.
