🍽️ Crispy Gnocchi with Kasseler and Sauerkraut

Ingredients
- Kasseler, in one piece 600 g
- oil 2 tbsp
- sauerkraut 520 g
- salt pinch
- pepper, black ground pinch
- cumin, whole 0.25 tsp
- vegetable broth 100 ml
- butter 2 tbsp
- gnocchi, fresh 600 g
- sour cream 150 g
- mustard 1 tsp
Instructions
- 1. Rinse the Kasseler under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Cut the Kasseler into slices about 1 cm thick.
- 4. Cut the slices further into thin strips.
- 5. Heat 1 tablespoon of oil in a pan over medium to high heat.
- 6. Fry the Kasseler strips for 3 to 4 minutes on all sides.
- 7. Remove the fried Kasseler from the pan and set it aside.
- 8. Place the sauerkraut in a pot.
- 9. Warm the sauerkraut over medium heat for about 3 minutes.
- 10. Season the sauerkraut with salt, pepper, and caraway seeds.
- 11. Add some broth to the sauerkraut.
- 12. Add the prepared Kasseler back into the pot.
- 13. Let the mixture simmer covered for 10 minutes.
- 14. Heat the remaining oil and butter in another pan over medium heat.
- 15. Sauté the Gnocchi all around for 5 to 7 minutes until golden brown.
- 16. Remove the pan with the Gnocchi from the heat.
- 17. Mix the Gnocchi with sour cream and mustard.
- 18. Taste the Gnocchi mixture and adjust seasoning if needed.
- 19. Taste the sauerkraut one more time as well.
- 20. Plate the sauerkraut.
- 21. Serve the mustard Gnocchi together with the sauerkraut.
