  1. 1. Rinse the Kasseler under running water.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the Kasseler into slices about 1 cm thick.
  4. 4. Cut the slices further into thin strips.
  5. 5. Heat 1 tablespoon of oil in a pan over medium to high heat.
  6. 6. Fry the Kasseler strips for 3 to 4 minutes on all sides.
  7. 7. Remove the fried Kasseler from the pan and set it aside.
  8. 8. Place the sauerkraut in a pot.
  9. 9. Warm the sauerkraut over medium heat for about 3 minutes.
  10. 10. Season the sauerkraut with salt, pepper, and caraway seeds.
  11. 11. Add some broth to the sauerkraut.
  12. 12. Add the prepared Kasseler back into the pot.
  13. 13. Let the mixture simmer covered for 10 minutes.
  14. 14. Heat the remaining oil and butter in another pan over medium heat.
  15. 15. Sauté the Gnocchi all around for 5 to 7 minutes until golden brown.
  16. 16. Remove the pan with the Gnocchi from the heat.
  17. 17. Mix the Gnocchi with sour cream and mustard.
  18. 18. Taste the Gnocchi mixture and adjust seasoning if needed.
  19. 19. Taste the sauerkraut one more time as well.
  20. 20. Plate the sauerkraut.
  21. 21. Serve the mustard Gnocchi together with the sauerkraut.
