  1. 1. Cut the onion in half and peel it.
  2. 2. Dice the onion into very small cubes.
  3. 3. Wash the parsley and shake off excess water.
  4. 4. Finely chop the parsley.
  5. 5. Drain the sauerkraut in a colander.
  6. 6. Squeeze the sauerkraut firmly with your hands to remove liquid.
  7. 7. Chop the sauerkraut coarsely.
  8. 8. Add the oats, onion cubes, parsley, sauerkraut, and bacon cubes to a bowl.
  9. 9. Season the mixture with salt and pepper.
  10. 10. Mix all ingredients in the bowl thoroughly.
  11. 11. Fill a deep plate with breadcrumbs.
  12. 12. Whisk the egg in a second deep plate.
  13. 13. Fill the flour in a third deep plate.
  14. 14. Heat about 2 cm of oil in a pan over high heat.
  15. 15. Form balls from the sauerkraut mixture with a diameter of approx. 3 cm.
  16. 16. Roll a ball first in the flour.
  17. 17. Dip the floured ball into the whisked egg.
  18. 18. Roll the ball last in the breadcrumbs.
  19. 19. Fry the balls in the hot oil for approx. 4 minutes until golden brown.
  20. 20. Let the finished balls drain on kitchen paper.
