🍽️ Crispy Sauerkraut Meatballs

Ingredients
- yellow onions 1 pc
- fresh parsley 10 g
- sauerkraut 400 g
- oat flakes, fine 100 g
- bacon strips 100 g
- salt pinch
- pepper, black ground pinch
- breadcrumbs 6 tbsp
- eggs 1 pc
- wheat flour, Type 405 6 tbsp
- frying oil 500 ml
Instructions
- 1. Cut the onion in half and peel it.
- 2. Dice the onion into very small cubes.
- 3. Wash the parsley and shake off excess water.
- 4. Finely chop the parsley.
- 5. Drain the sauerkraut in a colander.
- 6. Squeeze the sauerkraut firmly with your hands to remove liquid.
- 7. Chop the sauerkraut coarsely.
- 8. Add the oats, onion cubes, parsley, sauerkraut, and bacon cubes to a bowl.
- 9. Season the mixture with salt and pepper.
- 10. Mix all ingredients in the bowl thoroughly.
- 11. Fill a deep plate with breadcrumbs.
- 12. Whisk the egg in a second deep plate.
- 13. Fill the flour in a third deep plate.
- 14. Heat about 2 cm of oil in a pan over high heat.
- 15. Form balls from the sauerkraut mixture with a diameter of approx. 3 cm.
- 16. Roll a ball first in the flour.
- 17. Dip the floured ball into the whisked egg.
- 18. Roll the ball last in the breadcrumbs.
- 19. Fry the balls in the hot oil for approx. 4 minutes until golden brown.
- 20. Let the finished balls drain on kitchen paper.
