  1. 1. Cut the butter into small cubes.
  2. 2. Place the butter cubes into the mixing container.
  3. 3. Melt the butter at 70 degrees Celsius for 4 minutes on setting 3.
  4. 4. Pour the melted butter into a separate bowl.
  5. 5. Separate the eggs and set aside the egg whites for another use.
  6. 6. Attach the whisk attachment to the mixing container.
  7. 7. Add wine, water, egg yolks, salt, and pepper to the mixing container.
  8. 8. Whisk the mixture without the measuring cup for 5 minutes on setting 3 at 70 degrees Celsius.
  9. 9. Slowly pour the melted butter through the opening of the measuring cup into the mixture.
  10. 10. Cut the lemon in half and squeeze out the juice.
  11. 11. Remove the whisk attachment from the mixing container.
  12. 12. Season the sauce to taste with lemon juice, salt, and pepper.
