🍽️ Saté Skewers with Jasmine Rice and Almond Broccoli

Ingredients
- Pork tenderloin 600 g
- Peanut butter 30 g
- Oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
- Vegetable broth 100 ml
- Cilantro, fresh 20 g
- Jasmine rice 180 g
- Broccoli 2 pcs
- Garlic cloves 1 pc
- Almonds, whole 40 g
Instructions
- 1. Rinse the turkey meat under cold water.
- 2. Pat the meat dry with kitchen paper.
- 3. Cut the meat into cubes of about 2 cm.
- 4. Mix the peanut butter with 2 tablespoons of oil, salt, pepper, and broth in a bowl.
- 5. Place the turkey cubes into the marinade.
- 6. Set the bowl aside.
- 7. Wash the coriander.
- 8. Dry the coriander.
- 9. Finely chop the coriander leaves and stems.
- 10. Put the rice into a pot.
- 11. Pour 500 ml of salted water over it.
- 12. Bring the water to a boil.
- 13. Reduce the heat to low.
- 14. Cover the pot.
- 15. Let the rice cook for about 8 minutes.
- 16. Fill another pot with about 4 liters of water.
- 17. Salt the water in this pot.
- 18. Bring the water to a boil.
- 19. Preheat the oven to 150 °C (convection).
- 20. Wash the broccoli thoroughly.
- 21. Remove the stalk from the broccoli.
- 22. Cut the broccoli florets into small pieces.
- 23. Peel the broccoli stalk.
- 24. Cut off any woody parts from the stalk.
- 25. Cut the stalk into small cubes.
- 26. Put the broccoli into the boiling salted water.
- 27. Cook the broccoli for about 2 to 3 minutes.
- 28. Thread the marinated turkey pieces onto wooden skewers.
- 29. Heat a non-stick pan without fat over medium heat.
- 30. Fry the skewers all around for about 4 minutes.
- 31. Place the skewers on a baking sheet.
- 32. Cook the skewers in the oven for about 5 minutes.
- 33. Drain the broccoli in a sieve.
- 34. Peel the garlic.
- 35. Finely chop the garlic.
- 36. Heat another pan without fat over medium heat.
- 37. Roast the almonds in the pan for about 2 minutes.
- 38. Shake the pan regularly while doing so.
- 39. Add the broccoli and garlic to the pan.
- 40. Fry the mixture for about 2 minutes.
- 41. Season with salt and pepper.
- 42. Mix the rice with the chopped coriander.
- 43. Plate the Saté skewers.
- 44. Serve them with the jasmine rice and almond broccoli.
