🍽️ Cevapcici Rolls with Fresh Salad

Ingredients
- Courgettes 1 pc.
- Vine tomatoes 2 pc.
- Onions, red 1 pc.
- Parsley, fresh 10 g
- Lemons 1 pc.
- Olive oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
- Oil 2 tbsp
- Cevapcici 12 pc.
- Baguette 2 pc.
- Ajvar 6 tbsp
- Yogurt, plain 4 tbsp
Instructions
- 1. Wash the cucumber thoroughly and cut off the ends.
- 2. Cut the cucumber into cubes of about 1 cm.
- 3. Wash the tomatoes and cut them in half.
- 4. Remove the hard core from the tomatoes.
- 5. Cut the tomatoes into cubes as well.
- 6. Cut the onion in half and peel it.
- 7. Cut the onion into thin strips.
- 8. Wash the parsley and shake off excess water.
- 9. Pluck the leaves from the stems.
- 10. Finely chop the parsley leaves.
- 11. Cut the lemon in half.
- 12. Squeeze the juice from the lemon.
- 13. Place the cucumber cubes, tomato cubes, onion strips, and parsley into a bowl.
- 14. Add a splash of olive oil to the vegetables.
- 15. Mix everything well together.
- 16. Season the salad with salt and pepper.
- 17. Heat 2 tablespoons of oil in a pan over medium to high heat.
- 18. Fry the cevapcici (small grilled sausages) in it for 6 to 8 minutes.
- 19. Slice the baguettes lengthwise, but not all the way through.
- 20. Spread the bread halves with ajvar (roasted red pepper paste).
- 21. Fill the sandwiches with the fried cevapcici.
- 22. Place the prepared salad on top of the meat.
- 23. Add some yogurt.
- 24. Drizzle some lemon juice over the sandwich.
- 25. Add some pan drippings (fat and herb residues from the pan) to taste.
- 26. Sprinkle the sandwich with fresh parsley.
- 27. Serve the sandwich immediately.
