Ingredients
- Fresh cheese, plain 1 kg
- Whipping cream 500 ml
- Eggs 5 pcs.
- Sugar 350 g
- Wheat flour, Type 405 1 tbsp
Instructions
- 1. Preheat the oven to 250 °C (top/bottom heat). In a bowl, mix all ingredients with a hand mixer and whisk until you have a homogeneous mass. Line a springform pan with baking paper.
- 2. Distribute the batter evenly in the springform pan. Gently tap the springform pan twice on the work surface to remove air bubbles. Bake the San Sebastian Cheesecake for about 30 minutes in the oven.
- 3. Let the San Sebastian Cheesecake cool in the pan and then serve it. Enjoy! Note: The San Sebastian Cheesecake, also known as "burnt Basque cheesecake," should have a dark, but not burnt crust and be creamy and soft inside.
