🍳 Savory Waffles with Crispy Asparagus and Bacon

Ingredients
- butter 250 g
- sugar 40 g
- salt 2 tsp
- eggs 3 pcs
- wheat flour Type 550 300 g
- baking powder 1 tsp
- sour cream 250 g
- parsley, fresh 20 g
- oil 1 tbsp
- white asparagus 1 kg
- bacon 8 slices
- olive oil 4 tbsp
- lemon juice 2 tbsp
- cress bed 1 pc
- pepper, black ground pinch
Instructions
- 1. Mix soft butter, 30 grams of sugar, and a pinch of salt in a bowl with a hand mixer until the mixture is fluffy.
- 2. Stir the eggs into the butter-sugar mixture one by one.
- 3. Mix flour and baking powder in a separate bowl.
- 4. Alternate adding the flour mixture and the sour cream to the batter until a thick, homogeneous dough forms.
- 5. Wash the parsley, shake it dry, and chop it finely, but keep a few sprigs for decoration.
- 6. Gently fold the chopped parsley into the batter.
- 7. Preheat your waffle iron and lightly grease it.
- 8. Place about two tablespoons of batter in the center of the mold and spread it slightly smooth.
- 9. Bake the waffles for about two to three minutes until golden brown.
- 10. Repeat the process until you have baked a total of about eight waffles.
- 11. Wash the asparagus, peel it, and cut off the woody ends.
- 12. Cut the asparagus into bite-sized pieces.
- 13. Fry the bacon slices in a pan without additional fat on medium to high heat for four to five minutes until crispy.
- 14. Remove the bacon from the pan and set it aside.
- 15. Heat olive oil in the same pan on high heat.
- 16. Fry the asparagus for about five minutes on high heat.
- 17. Season the asparagus with salt, the remaining sugar, and pepper.
- 18. Reduce the heat to low and continue frying the asparagus for another two minutes.
- 19. Drizzle some lemon juice over the asparagus and taste to adjust the seasoning.
- 20. Plate the savory waffles.
- 21. Top with the fried asparagus and crispy bacon slices.
- 22. Garnish the waffles with the remaining parsley and fresh cress.
- 23. Serve the dish immediately and enjoy.
