🍰 Salted Butter Caramel Truffles

Ingredients
- butter 50 g
- sea salt 2 g
- chocolate, dark 150 g
- sugar 200 g
- water 50 ml
- whipping cream 100 ml
- almonds, sliced 80 g
Instructions
- 1. Take the butter and mix it with the salt in a bowl.
- 2. Let the butter mixture warm up to room temperature.
- 3. Put about 500 milliliters of water into a pot.
- 4. Bring the water in the pot to a boil.
- 5. Chop the chocolate coarsely.
- 6. Place the chopped chocolate into a metal bowl.
- 7. Place the metal bowl with the chocolate over the hot water bath.
- 8. Melt the chocolate in the hot water bath.
- 9. Put the sugar and the water into a clean pot.
- 10. Heat the sugar-water mixture over medium heat.
- 11. Bring the mixture to a boil.
- 12. Reduce the heat once the mixture is boiling.
- 13. Let the sugar caramelize for about 3 minutes.
- 14. Stir in the salted butter as soon as the caramelizing begins.
- 15. Deglaze the caramel-butter mixture with the cream.
- 16. Stir the caramel cream mixture into the melted chocolate.
- 17. Line a mold with cling film.
- 18. Fill the lined mold with the caramel chocolate mixture.
- 19. Place the mold in the refrigerator for about 1 to 2 hours.
- 20. Prepare a plate with almond flakes.
- 21. Cut the cooled truffles into the desired piece size.
- 22. Roll the truffle pieces in the almond flakes.
- 23. Serve the truffles.
