  1. 1. Take the butter and mix it with the salt in a bowl.
  2. 2. Let the butter mixture warm up to room temperature.
  3. 3. Put about 500 milliliters of water into a pot.
  4. 4. Bring the water in the pot to a boil.
  5. 5. Chop the chocolate coarsely.
  6. 6. Place the chopped chocolate into a metal bowl.
  7. 7. Place the metal bowl with the chocolate over the hot water bath.
  8. 8. Melt the chocolate in the hot water bath.
  9. 9. Put the sugar and the water into a clean pot.
  10. 10. Heat the sugar-water mixture over medium heat.
  11. 11. Bring the mixture to a boil.
  12. 12. Reduce the heat once the mixture is boiling.
  13. 13. Let the sugar caramelize for about 3 minutes.
  14. 14. Stir in the salted butter as soon as the caramelizing begins.
  15. 15. Deglaze the caramel-butter mixture with the cream.
  16. 16. Stir the caramel cream mixture into the melted chocolate.
  17. 17. Line a mold with cling film.

  19. 19. Place the mold in the refrigerator for about 1 to 2 hours.
  20. 20. Prepare a plate with almond flakes.
  21. 21. Cut the cooled truffles into the desired piece size.
