🥗 Salad with Caramelized Nuts

Ingredients
- walnut kernels 30 g
- cashew kernels 30 g
- hazelnut kernels, whole 30 g
- sugar 1 tbsp
- balsamic vinegar, light 3 tbsp
- salt pinch
- shallots 1 pc.
- mustard 1 tsp
- honey 1 tsp
- oil 4 tbsp
- pepper, black ground pinch
- celery stalks 0.25 pc.
- figs 4 pc.
- salad mix 200 g
- arugula 50 g
Instructions
- 1. Chop the nuts roughly. In a pan without fat, roast them golden brown for about 2–3 minutes, shaking the pan constantly. As soon as they start to darken and smell fragrant, remove 2 tbsp of the nuts and set aside. Sprinkle the remaining nuts with sugar and let them caramelize for approx. 1–2 minutes.
- 2. Deglaze the nuts with 1–2 tbsp of vinegar, mix well, and place them on a sheet of baking paper. Lightly salt and let the nuts cool down.
- 3. In the meantime, halve, peel, and finely dice the shallots. Chop the set-aside nuts very finely. In a bowl, mix both with the remaining vinegar, mustard, honey, and oil, and season with salt and pepper.
- 4. Wash the celery stalks, remove the core, and slice them thinly. Rinse the figs, halve them, and slice them thinly. Tear the salad into small pieces. Thoroughly wash the salad leaves and arugula and spin them dry in a salad spinner.
- 5. Mix everything with the dressing, adjust seasoning to taste if necessary, and plate. Sprinkle with the caramelized nuts and serve. Enjoy your meal!
