🥗 Fresh Grapefruit Salad with Asian Dressing

Ingredients
- Green beans 250 g
- Salt Pinch
- Grapefruit 2 pcs
- Spring onions 2 pcs
- Mixed salad leaves 500 g
- Basil, fresh 30 g
- Cucumbers 1 pc
- Brown sugar 2 tsp
- Soy sauce 2 tsp
- Pepper, black ground Pinch
- Rapeseed oil 3 tbsp
Instructions
- 1. Thoroughly rinse the beans under running water.
- 2. Remove the tough ends from the beans.
- 3. Bring about 1 liter of salted water to a boil in a pot.
- 4. Add the beans to the boiling water.
- 5. Cook the beans for about 10 minutes.
- 6. Drain the beans.
- 7. Immediately rinse the beans with cold water to stop the cooking process.
- 8. Let the beans cool down.
- 9. Cut off the white pith and membranes from the grapefruits completely.
- 10. Carefully cut the grapefruit segments out of the membranes.
- 11. Catch the released juice in a bowl.
- 12. Wash the spring onions.
- 13. Dry the spring onions with a kitchen towel.
- 14. Remove the root ends of the spring onions.
- 15. Slice the spring onions into thin rings.
- 16. Wash the salad leaves.
- 17. Tear the salad into bite-sized pieces.
- 18. Let the salad drain well.
- 19. Wash the basil.
- 20. Shake the basil dry.
- 21. Pluck the basil leaves from the stems.
- 22. Finely chop the basil leaves.
- 23. Peel the cucumber.
- 24. Slice the cucumber into long, thin strips using a vegetable peeler.
- 25. Place the spring onion rings in a bowl with the grapefruit juice.
- 26. Add the cane sugar.
- 27. Add the soy sauce.
- 28. Season with pepper.
- 29. Mix all dressing ingredients well.
- 30. Stir the oil into the dressing.
- 31. Finally, taste and adjust the seasoning of the dressing.
- 32. Distribute the salad onto the plates.
- 33. Add the basil leaves to the salad.
- 34. Place the cucumber strips on the salad.
- 35. Add the grapefruit segments to the salad.
- 36. Add the cooled beans to the salad.
- 37. Drizzle the salad with the dressing.
- 38. Serve the salad immediately.
