  1. 1. Thoroughly wash the cucumbers under running water.
  2. 2. Place the cucumbers on a cutting board.
  3. 3. Gently press the cucumbers flat with a heavy pot or a meat mallet until they crack.
  4. 4. Cut the pressed cucumbers into coarse pieces.
  5. 5. Place the cucumber pieces in a colander and salt them generously.
  6. 6. Wash the peaches thoroughly.
  7. 7. Halve the peaches and remove the pits.
  8. 8. Cut the peach halves into thick wedges.
  9. 9. Tear the mozzarella into coarse pieces using your hands.
  10. 10. Wash the salad greens and spin them dry.
  11. 11. Rinse the blueberries.
  12. 12. Place the blueberries, mustard, 1 teaspoon of honey, olive oil, and balsamic vinegar in a tall container.
  13. 13. Blend the ingredients into a smooth sauce.
  14. 14. Season the sauce to taste with salt and pepper.
  15. 15. Preheat the grill.
  16. 16. Roast the peach wedges on the hot grill for about 5 minutes.
