  1. 1. Remove the pistachios from their shells and chop coarsely. In a bowl, mix well with the cream cheese and 1 tsp honey. Season with salt and pepper.
  2. 2. Wash the basil and salad thoroughly, drain and tear into pieces. Wash the apricots, halve, pit and cut into wedges.
  3. 3. Heat olive oil in a pan over medium heat and fry the apricots in it for about 3 minutes, then remove from the pan. Whisk the pan drippings with balsamic vinegar, 1 tsp honey, salt and pepper.
  4. 4. Toss the salad and the fried apricots with the dressing in the pan and arrange on plates. Serve with the pistachio cream cheese. Enjoy your meal!
