🥗 Salad with Basil and Fried Apricots served with Cream Cheese and Pistachios

Ingredients
- Pistachios 4 tbsp
- Cream cheese, plain 150 g
- Honey 2 tsp
- Salt pinch
- Pepper, black ground pinch
- Basil, fresh 50 g
- Mixed salad greens 150 g
- Apricots, fresh 6 pcs
- Olive oil 4 tbsp
- Balsamic vinegar, dark 2 tbsp
Instructions
- 1. Remove the pistachios from their shells and chop coarsely. In a bowl, mix well with the cream cheese and 1 tsp honey. Season with salt and pepper.
- 2. Wash the basil and salad thoroughly, drain and tear into pieces. Wash the apricots, halve, pit and cut into wedges.
- 3. Heat olive oil in a pan over medium heat and fry the apricots in it for about 3 minutes, then remove from the pan. Whisk the pan drippings with balsamic vinegar, 1 tsp honey, salt and pepper.
- 4. Toss the salad and the fried apricots with the dressing in the pan and arrange on plates. Serve with the pistachio cream cheese. Enjoy your meal!
