  1. 1. Thoroughly rinse the chicory under running water.
  2. 2. Remove the hard base at the bottom of the chicory.
  3. 3. Cut the chicory into very thin strips.
  4. 4. Cut one orange in half.
  5. 5. Squeeze the juice out of the orange.
  6. 6. Take the second orange and peel it with a sharp knife.
  7. 7. Make sure to remove all the white pith.
  8. 8. Cut the fillets out from between the membranes using a V-shaped cut.
  9. 9. Cut the orange fillets into small cubes.
  10. 10. Take a bowl.
  11. 11. Pour the freshly squeezed orange juice into the bowl.
  12. 12. Add honey.
  13. 13. Season with salt.
  14. 14. Season with pepper.
  15. 15. Mix the ingredients well together.
  16. 16. Chop the walnuts finely.
  17. 17. Add the chopped walnuts to the marinade.
  18. 18. Add the orange cubes to the marinade.
  19. 19. Add the cut chicory to the marinade.
  20. 20. Let the mixture marinate for a while.
  21. 21. Take the bread slices.
  22. 22. Lightly toast the bread slices in a toaster or in the oven.
  23. 23. Spread butter on the toasted bread slices.
  24. 24. Top the bread slices with salami.
  25. 25. Drain the chicory mixture so it is no longer wet.
  26. 26. Top the bread slices with the drained chicory mixture.
  27. 27. Serve the finished salami rolls with chicory.
