  1. 1. Peel the potatoes, rinse thoroughly, and halve or quarter depending on size. Bring to a boil in a pot of salted water and cook until tender for about 25 minutes.
  2. 2. Spread the flour on a shallow plate. Rinse the Arctic char and pat dry with kitchen paper. Halve one lemon and squeeze out the juice. Drizzle the fish with lemon juice and season with salt and pepper. Then coat the fish in flour on both sides and shake off excess flour.
  3. 3. Heat 90 g of butter in a pot and let it brown slightly. Wash the parsley, dry it, pluck the leaves, and chop them. Add the chopped parsley and sliced almonds to the butter and season with salt and lemon juice.
  4. 4. Heat the oil in a large pan over medium heat and fry the Arctic char for about 8 minutes on each side until golden brown. Towards the end of the cooking time, add 2 tbsp of butter and pour it over the fish. Rinse the remaining lemon and quarter it.
  5. 5. Plate the Arctic char and serve with the almond-parsley butter and boiled potatoes. Enjoy your meal!
