- 1. Thoroughly clean the fish under cold water and pat dry with a kitchen towel. Position a sharp knife at an angle at the head and make a cut down to the center bone.
- 2. Reposition the knife and carefully cut along the center bone down to the tail fin.
- 3. Separate the meat from the backbone along the center bone with even movements.
- 4. Carefully loosen the Arctic char fillet.
- 5. Slide the knife under the center bone and separate the second fillet.
- 6. Process the fillets as desired.
