🥤 Juicy Turkey Goulash with Apple Red Cabbage and Fried Dumplings

Ingredients
- onions, yellow 2 pcs.
- thyme, fresh 5 g
- turkey breast fillet 600 g
- salt pinch
- oil 6 tbsp
- tomato paste 1 tbsp
- poultry broth 500 ml
- red wine, dry 100 ml
- butter 4 tbsp
- mini potato dumplings 750 g
- apples, red 1 pc.
- sugar 2 tsp
- red cabbage from the jar 720 g
- bay leaves, dried 1 pc.
- cornstarch 2 tbsp
- pepper, black ground pinch
Instructions
- 1. Halve the onions and peel them. Dice them finely. Rinse the thyme under cold water. Tie the thyme sprigs together into a bundle with kitchen twine. Rinse the turkey meat and pat it dry. Cut it into approx. 3 cm pieces. Season the meat generously with salt.
- 2. Heat 2 tbsp of oil in a pot over medium-high heat. Brown the turkey pieces for approx. 5 minutes. Remove the meat from the pot and place it on a plate.
- 3. Do not clean the pot. Heat another 2 tbsp of oil in the pan drippings over medium heat. Fry the onions for approx. 2 minutes. Stir in the tomato paste and fry for approx. 2 minutes. Deglaze with broth and red wine. Add the thyme bundle. Simmer the sauce over low heat for approx. 15 minutes.
- 4. Melt the butter in a frying pan over medium heat. Fry the dumplings for approx. 15 minutes. Turn them occasionally until golden brown.
- 5. Wash the apple. Quarter it and remove the core. Cut the flesh into small cubes. Heat 2 tbsp of oil in a pot over medium heat. Fry the apple cubes with 2 tsp of sugar for approx. 2 minutes. Add the red cabbage and the bay leaf. Cook everything covered for approx. 6–7 minutes.
- 6. Remove the thyme bundle from the sauce. Mix the cornstarch with a little water in a bowl until smooth. Stir the cornstarch mixture into the boiling sauce. Return the turkey pieces to the sauce. Let them cook for another approx. 3–4 minutes.
- 7. Season the red cabbage with salt. Season the goulash with salt and pepper. Plate the goulash. Serve it together with the red cabbage and the fried dumplings. Enjoy your meal!
