🍲 Saxon Potato Soup

Ingredients
- onions, yellow 1 pc.
- soup vegetables 1 bunch
- potatoes, mostly waxy 1 kg
- sunflower oil 1 tbsp
- bacon strips 125 g
- poultry broth 800 ml
- bay leaves, dried 1 pc.
- marjoram, dried pinch
- salt pinch
- pepper, black ground pinch
- nutmeg, ground pinch
Instructions
- 1. Cut the onion in half, peel it, and dice it. Wash or peel the soup vegetables and chop them finely. Peel, wash, and roughly cube the potatoes.
- 2. Heat 1 tablespoon of oil in a pot over medium to high heat and fry the bacon until crispy for about 4 minutes. Remove and set aside. Do not clean the pot.
- 3. Sauté the onion, vegetables, and potatoes in the hot bacon fat for about 2 minutes. Pour in the broth, add the bay leaf and marjoram. Lightly salt and pepper. Bring to a boil and cook covered for about 20 minutes.
- 4. Remove the bay leaf and puree the soup to your desired consistency, either chunky or smooth. Season with nutmeg, salt, and pepper, and serve topped with the bacon and remaining marjoram. Enjoy your meal!
