🍽️ Spicy Russian Eggs

Ingredients
- Eggs 8 pcs.
- Mayonnaise 1 tbsp.
- Mustard 1 tsp.
- Gherkins 2 pcs.
- Capers 1 tsp.
- Dill, fresh 10 g
- Lemons 1 pc.
- Anchovy fillets in olive oil 10 g
- Salt pinch
- Pepper, black ground pinch
- Chili, ground pinch
- Cayenne pepper pinch
Instructions
- 1. In a pot, bring about 1 l of water to a boil and cover. Add the eggs to the boiling water and cook for about 7 minutes. Then drain the eggs, shock them in cold water, and peel them. Next, halve the eggs lengthwise and remove the yolks.
- 2. Press the yolks through a fine sieve and mix well in a bowl with mayonnaise and mustard.
- 3. Drain the gherkins and capers and chop finely. Wash the dill, pat dry, remove the thick stems, and chop finely as well. Halve a lemon and squeeze out the juice. Chop the anchovies finely.
- 4. Combine the gherkins, capers, anchovies, and dill with the yolk mixture and season to taste with salt, pepper, chili, and a little lemon juice. Fill the mixture into a piping bag.
- 5. Place the egg halves cut-side up on a plate and fill them with the cream. Sprinkle the spicy Russian eggs with cayenne pepper and serve. Enjoy your meal!
