  1. 1. In a pot, bring about 1 l of water to a boil and cover. Add the eggs to the boiling water and cook for about 7 minutes. Then drain the eggs, shock them in cold water, and peel them. Next, halve the eggs lengthwise and remove the yolks.
  2. 2. Press the yolks through a fine sieve and mix well in a bowl with mayonnaise and mustard.
  3. 3. Drain the gherkins and capers and chop finely. Wash the dill, pat dry, remove the thick stems, and chop finely as well. Halve a lemon and squeeze out the juice. Chop the anchovies finely.
  4. 4. Combine the gherkins, capers, anchovies, and dill with the yolk mixture and season to taste with salt, pepper, chili, and a little lemon juice. Fill the mixture into a piping bag.
  5. 5. Place the egg halves cut-side up on a plate and fill them with the cream. Sprinkle the spicy Russian eggs with cayenne pepper and serve. Enjoy your meal!
