  1. 1. Rinse the steaks under cold water and pat them dry with a kitchen towel.
  2. 2. Let the steaks sit at room temperature to warm up.
  3. 3. Wash the potatoes thoroughly under running water.
  4. 4. Place the potatoes in a pot and cover them almost completely with salted water.
  5. 5. Bring the water to a boil with the lid on.
  6. 6. Reduce the heat to medium and cook the potatoes for about 20 minutes.
  7. 7. Wash the kohlrabi under running water.
  8. 8. Peel the skin off the kohlrabi.
  9. 9. Remove any hard or woody core pieces.
  10. 10. Cut the kohlrabi into small sticks.
  11. 11. Bring about 2 liters of salted water to a boil in a pot.
  12. 12. Add the kohlrabi sticks to the boiling water.
  13. 13. Cook the kohlrabi for approx. 4 minutes.
  14. 14. Take out a cup of the cooking water and set it aside.
  15. 15. Drain the kohlrabi in a colander.
  16. 16. Add 2 tablespoons of the saved cooking water to the pot.
  17. 17. Add cream cheese and 1 tablespoon of butter.
  18. 18. Mix the ingredients well together.
  19. 19. Return the drained kohlrabi to the pan.
  20. 20. Season the vegetables with salt, pepper, and a pinch of sugar.
  21. 21. Keep the vegetables warm over low heat with the lid on.
  22. 22. Heat oil in a pan over high heat.
  23. 23. Salt the steaks on all sides.
  24. 24. Sear the steaks in the hot oil on both sides.
  25. 25. This process should take about 2 minutes per side.
  26. 26. Reduce the heat to medium.
  27. 27. Add 1 tablespoon of butter to the pan.
  28. 28. Finish cooking the meat all around for approx. 5 minutes.
  29. 29. Pepper the steaks to taste.
  30. 30. Wrap the steaks in aluminum foil.
  31. 31. Let the steaks rest until serving.
  32. 32. Leave the pan with the pan juices uncleaned.
  33. 33. Check if the potatoes are cooked (they should slide easily off a knife).
  34. 34. Drain the potatoes using the lid.
  35. 35. Add 2 tablespoons of butter to the pan with the pan juices.
  36. 36. Melt the butter over medium heat.
  37. 37. Fry the potatoes for about 5 minutes until golden brown.
  38. 38. Wash the chives under running water.
  39. 39. Shake the chives dry.
  40. 40. Cut the chives into fine rings.
  41. 41. Add the chives to the kohlrabi vegetables.
  42. 42. Season the vegetables to taste with salt and pepper.
  43. 43. Plate the steaks, potatoes, and kohlrabi vegetables.
