🍽️ Juicy rumpsteaks with creamy kohlrabi and crispy potatoes

Ingredients
- beef rump steaks 600 g
- potatoes, mostly waxy 1 kg
- salt pinch
- kohlrabi 2 pcs.
- cream cheese, plain 4 tbsp
- butter 4 tbsp
- pepper, black ground pinch
- sugar pinch
- oil 2 tbsp
- chives, fresh 10 g
Instructions
- 1. Rinse the steaks under cold water and pat them dry with a kitchen towel.
- 2. Let the steaks sit at room temperature to warm up.
- 3. Wash the potatoes thoroughly under running water.
- 4. Place the potatoes in a pot and cover them almost completely with salted water.
- 5. Bring the water to a boil with the lid on.
- 6. Reduce the heat to medium and cook the potatoes for about 20 minutes.
- 7. Wash the kohlrabi under running water.
- 8. Peel the skin off the kohlrabi.
- 9. Remove any hard or woody core pieces.
- 10. Cut the kohlrabi into small sticks.
- 11. Bring about 2 liters of salted water to a boil in a pot.
- 12. Add the kohlrabi sticks to the boiling water.
- 13. Cook the kohlrabi for approx. 4 minutes.
- 14. Take out a cup of the cooking water and set it aside.
- 15. Drain the kohlrabi in a colander.
- 16. Add 2 tablespoons of the saved cooking water to the pot.
- 17. Add cream cheese and 1 tablespoon of butter.
- 18. Mix the ingredients well together.
- 19. Return the drained kohlrabi to the pan.
- 20. Season the vegetables with salt, pepper, and a pinch of sugar.
- 21. Keep the vegetables warm over low heat with the lid on.
- 22. Heat oil in a pan over high heat.
- 23. Salt the steaks on all sides.
- 24. Sear the steaks in the hot oil on both sides.
- 25. This process should take about 2 minutes per side.
- 26. Reduce the heat to medium.
- 27. Add 1 tablespoon of butter to the pan.
- 28. Finish cooking the meat all around for approx. 5 minutes.
- 29. Pepper the steaks to taste.
- 30. Wrap the steaks in aluminum foil.
- 31. Let the steaks rest until serving.
- 32. Leave the pan with the pan juices uncleaned.
- 33. Check if the potatoes are cooked (they should slide easily off a knife).
- 34. Drain the potatoes using the lid.
- 35. Add 2 tablespoons of butter to the pan with the pan juices.
- 36. Melt the butter over medium heat.
- 37. Fry the potatoes for about 5 minutes until golden brown.
- 38. Wash the chives under running water.
- 39. Shake the chives dry.
- 40. Cut the chives into fine rings.
- 41. Add the chives to the kohlrabi vegetables.
- 42. Season the vegetables to taste with salt and pepper.
- 43. Plate the steaks, potatoes, and kohlrabi vegetables.
- 44. Enjoy your meal.
