🍳 Scrambled Tofu with Toasted Crusty Bread

Ingredients
- spring onions 0.5 bunch
- tofu, plain 400 g
- soy drink 125 ml
- turmeric, ground 0.25 tsp
- bell pepper, rose 0.5 tsp
- salt pinch
- pepper, black ground pinch
- crusty bread 0.5 piece
- oil 4 tbsp
Instructions
- 1. Wash the spring onions thoroughly, shake off excess water, trim the roots, and slice the green and white parts separately at an angle. Crumble the tofu in a bowl with your hands and add the soy drink. Season generously with turmeric, paprika, salt, and pepper.
- 2. Slice the bread into approximately 2 cm thick slices. Heat 2 tablespoons of oil in a pan over medium heat and toast the bread slices until golden brown on both sides.
- 3. Plate the dish, sprinkle with the green spring onions, and serve alongside the bread.
