🍽️ Rucola Salad with Mango Dressing

Ingredients
- Mango 1 pc.
- Shallots 1 pc.
- Garlic cloves 1 pc.
- Organic Limes 1 pc.
- Rapeseed oil 4 tbsp.
- Salt 1 pinch
- Pepper, black ground 1 pinch
- Brown sugar 1 pinch
- Basil, fresh 40 g
- Arugula 200 g
- Macadamia nuts, roasted and salted 40 g
Instructions
- 1. Peel the mango, cut the flesh away from the pit, and dice it roughly. Peel and finely chop the shallot and garlic. Wash the lime, cut it in half, and squeeze out the juice.
- 2. In a tall container, puree half of the mango. Mix it with the shallot, garlic, canola oil, and 2 teaspoons of lime juice. Season with salt, pepper, and sugar.
- 3. Pluck the basil leaves and wash them with the arugula, then spin dry. Coarsely chop the macadamia nuts. Combine the arugula, basil, mango cubes, and macadamia nuts with the dressing and plate them.
