🥗 Grilled Peach and Arugula Salad with Goat Cheese

Ingredients
- Peaches 5 pcs
- Arugula 150 g
- Olive oil 3 tbsp
- Balsamic vinegar, light 2 tbsp
- Mustard 1 tsp
- Maple syrup 1 tbsp
- Lemon juice 2 tbsp
- Salt pinch
- Pepper, mixed pinch
- Pistachios 50 g
- Vegan shepherd's delight 150 g
Instructions
- 1. Wash the peaches thoroughly.
- 2. Cut the peaches in half and remove the pit.
- 3. Cut the peach halves into thick wedges.
- 4. Place the peach wedges on the hot grill.
- 5. Grill the peaches for about 5 minutes.
- 6. Wash the arugula thoroughly.
- 7. Spin the arugula dry.
- 8. Place the arugula in a large bowl.
- 9. Take a small bowl for the dressing.
- 10. Add olive oil to the small bowl.
- 11. Add vinegar to the bowl.
- 12. Add mustard to the bowl.
- 13. Add maple syrup to the bowl.
- 14. Add lemon juice to the bowl.
- 15. Whisk the dressing ingredients together well.
- 16. Season the dressing with salt.
- 17. Season the dressing with pepper.
- 18. Pour the dressing over the arugula.
- 19. Toss the arugula with the dressing.
- 20. Chop the pistachios coarsely.
- 21. Arrange the arugula salad on a plate.
- 22. Place the grilled peaches on the salad.
- 23. Crumble the goat cheese over the salad.
- 24. Sprinkle the pistachios over the salad.
