🍰 Juicy Red Wine Muffins with Plums

Ingredients
- Plums 12 pcs
- Sugar 160 g
- Cinnamon 0.5 tsp
- Almonds, sliced 50 g
- Wheat flour, Type 405 200 g
- Baking powder 0.5 tsp
- Cocoa powder 40 g
- Salt pinch
- Chocolate sprinkles, milk chocolate 50 g
- Eggs 2 pcs
- Red wine, dry 150 ml
- Sunflower oil 150 g
Instructions
- 1. Preheat your oven to 200 degrees Celsius top/bottom heat.
- 2. Place 12 paper liners into a muffin tin.
- 3. Wash the plums and cut them in half.
- 4. Remove the pits from the plum halves.
- 5. Cut the plums into thin wedges.
- 6. Toss the plums in a bowl with 10 grams of sugar, cinnamon, and the almonds.
- 7. Distribute the plum mixture evenly to the bottom of the paper liners.
- 8. Add all dry ingredients for the batter into a large mixing bowl.
- 9. Add the remaining wet ingredients to the dry mixture.
- 10. Stir everything briefly until just combined.
- 11. Scoop the batter onto the plums in the liners using an ice cream scoop or spoon.
- 12. Bake the muffins for 25 to 30 minutes in the preheated oven.
- 13. Perform a toothpick test to check if the muffins are fully baked.
- 14. Remove the muffins from the oven as soon as the toothpick comes out clean.
- 15. Let the muffins cool in the tin for a moment.
- 16. Serve the muffins warm or lukewarm.
