🍽️ Colorful Bowl with Red Cabbage and Quinoa

Ingredients
- onions, yellow 2 pcs.
- oil 2 tbsp.
- red cabbage, fresh 200 g
- orange juice 300 ml
- Veggie Mix Pumpkin-Quinoa 800 g
- salt pinch
- pepper, black ground pinch
- walnut kernels 100 g
Instructions
- 1. Halve the onions and remove the outer skin.
- 2. Cut the onions into thin strips.
- 3. Quarter the red cabbage and remove the hard core in the center.
- 4. Shred the red cabbage into thin strips.
- 5. Heat oil in a pan over medium heat.
- 6. Fry the onion strips in the pan.
- 7. Add the red cabbage strips to the pan.
- 8. Fry the red cabbage for about 3 minutes.
- 9. Deglaze the vegetables with orange juice.
- 10. Bring the mixture to a boil.
- 11. Reduce the heat to low.
- 12. Simmer the vegetables for about 10 minutes.
- 13. Wait until all the liquid has been absorbed.
- 14. Add the veggie mix and 2 tablespoons of oil.
- 15. Fry the mixture for about 5 minutes, stirring occasionally.
- 16. Chop the walnuts coarsely.
- 17. Add the walnuts to the pan.
- 18. Season the dish with salt and pepper.
- 19. Fill the bowl with the mixture.
- 20. Serve the bowl immediately.
