  1. 1. Thoroughly wash the red cabbage under running water.
  2. 2. Remove any wilted or damaged leaves.
  3. 3. Cut the head into four quarters.
  4. 4. Punch out the hard core from the center.
  5. 5. Slice the cabbage flesh into very fine strips.
  6. 6. Also wash the apples thoroughly.
  7. 7. Quarter the apples.
  8. 8. Remove the core and seeds.
  9. 9. Slice the apple flesh into thin rounds.
  10. 10. Peel the carrots completely.
  11. 11. Trim off the hard ends at the tips.
  12. 12. Slice the carrots into thin rounds as well.
  13. 13. Add the oil, vinegar, mustard, sugar, cinnamon, salt, and pepper into a large bowl.
  14. 14. Whisk the dressing ingredients vigorously together.
  15. 15. Add the sliced red cabbage, apple slices, and carrot rounds to the bowl.
  16. 16. Mix the vegetables thoroughly with the dressing.
  17. 17. Slice off the grapefruit peel with a sharp knife so that only the fruit flesh remains.
  18. 18. Also remove all the white pith between the fruit segments.
  19. 19. Carefully cut out the grapefruit segments from the membranes.
  20. 20. Wash the chives under cold water.
  21. 21. Pat the chives dry with a kitchen towel.
  22. 22. Chop the chives into small rings.
  23. 23. Coarsely chop the cashew nuts.
  24. 24. Save a small portion of the grapefruit segments, rings, and nuts for decoration.
  25. 25. Mix the remaining salad with the remaining grapefruit segments, chives, and cashew nuts.
  26. 26. Plate the salad.
  27. 27. Decorate the portions with the saved grapefruit segments, chive rings, and cashew nuts.
  28. 28. Let the salad sit for about 30 minutes if possible, so the flavors can develop better.
